Combine the rice and 2 3/4 cups water in a medium pot. Bring to a boil over high heat, then reduce to the lowest setting, cover tightly, and cook for 18 minutes until the water is fully absorbed. Remove from heat and let steam, covered, for 10 minutes.
While the rice cooks, combine the rinsed lentils and 2 1/2 cups water in a medium saucepan. Bring to a boil over high heat, then reduce to a steady simmer and cook for 20–25 minutes until the lentils are tender but still hold their shape. Drain any excess water and return the lentils to the saucepan.
