Rinse the rice in a medium saucepan under cold water until the water runs mostly clear, then drain. Add 2 1/4 cups water and bring to a boil over high heat. Reduce heat to the lowest setting, cover tightly, and cook for 15 minutes, until all the water is absorbed. Remove from heat and let steam, covered, for 10 minutes.
While the rice cooks, whisk together the soy sauce, mirin, sake, brown sugar, sesame oil, ginger, and garlic in a small bowl until the sugar dissolves. Set the teriyaki sauce aside.
