In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, cornstarch, and sriracha (if using) until the cornstarch is fully dissolved with no lumps. Set aside.
Heat 1 tbsp of the neutral oil in a large (12-inch) skillet or wok over medium-high heat until shimmering. Add the tempeh cubes in a single layer and cook undisturbed for 3–4 minutes, until the undersides are deep golden brown. Flip and cook for another 2–3 minutes, until golden on the second side. Transfer the tempeh to a plate and set aside.
