Few dishes nail the contrast of shatteringly crisp exterior and tender, yielding interior the way this classic Swiss potato cake does. The magic starts a day ahead — parboiling the potatoes and chilling them overnight is the key step that gives you those long, distinct shreds that hold together and brown beautifully rather than turning to mush. A combination of butter and neutral oil in the pan means you get rich flavor alongside a high smoke point, so the crust develops that deep, golden color without burning. The flip is the moment that separates a good rösti from a great one, and the plate-invert method here makes it far less intimidating than it sounds. Because the entire ingredient list is built around potatoes, butter, oil, salt, and pepper, there are no hidden additives or processed components to second-guess — just honest, whole-food cooking. It's the kind of side dish that pairs effortlessly with eggs in the morning or a simple salad at dinner, and it looks far more impressive on the table than the effort involved would suggest.

Place the whole, unpeeled potatoes in a large pot and cover with cold water by at least 1 inch. Bring to a boil over high heat, then reduce to a steady simmer and cook until a skewer meets firm resistance about 1 inch in from the surface but the center is still raw, about 12–15 minutes — the potatoes should be about halfway cooked through. Drain and let cool completely, then refrigerate uncovered for at least 8 hours or overnight.
Peel the cold parboiled potatoes. Using the large holes of a box grater or a food processor fitted with a grating disc, grate the potatoes into a large bowl. Season with 1 tsp salt and 1/4 tsp black pepper and toss gently to distribute.
