Few dishes nail the balance of crispy exterior and tender, yielding interior quite like this classic Swiss potato cake. It starts with a smart parboiling technique — cooking the potatoes just halfway through before chilling them overnight — which gives the finished rösti its signature texture without turning mushy. Every single ingredient here is exactly what it sounds like: potatoes, butter, oil, salt, and pepper. No sauces, no packaged shortcuts, no sweeteners hiding in the fine print — which makes it a genuinely clean choice when you're trying to avoid high-fructose corn syrup and the processed additives that sneak into so many convenience foods. The real magic happens in the skillet, where a combination of butter and neutral oil builds that deep, golden crust on both sides. Flipping the whole cake onto a plate and sliding it back into the pan feels a little dramatic the first time, but it's easier than it looks and completely worth the confidence boost when you see that second side come out just as gorgeous. Serve it in wedges straight from the cutting board while it's still crackling hot.

Place the whole, unpeeled potatoes in a large pot and cover with cold water by at least 1 inch. Bring to a boil over high heat, then reduce to a steady simmer and cook until a skewer meets firm resistance about 1 inch in from the surface but the center is still raw, about 12–15 minutes — the potatoes should be about halfway cooked through. Drain and let cool completely, then refrigerate uncovered for at least 8 hours or overnight.
Peel the cold parboiled potatoes. Using the large holes of a box grater or a food processor fitted with a grating disc, grate the potatoes into a large bowl. Season with 1 tsp salt and 1/4 tsp black pepper and toss gently to distribute.
