Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper.
Place the sweet potato cubes in a small saucepan, cover with cold water, and bring to a boil over medium-high heat. Cook until completely tender when pierced with a fork, about 12–15 minutes. Drain thoroughly and mash with a fork or potato masher until smooth with no lumps. Measure out 3/4 cup of the mash and let it cool to room temperature.
