This hearty one-pan breakfast is exactly the kind of satisfying, colorful meal that makes mornings feel worth getting out of bed for. Caramelized sweet potato and carrot bring natural sweetness, while zucchini and onion add body, and the homemade pork seasoned with sage, thyme, turmeric, and ginger delivers deep, savory flavor in every bite. Managing iodine intake at breakfast can be genuinely tricky, since so many convenient morning options rely on processed meats, iodized salt, or dairy — none of which appear here. The sausage is made from scratch using plain ground pork and your own spices, so you stay in full control of what goes into the pan. Coconut oil handles the cooking fat duties cleanly, and every vegetable in the mix is a naturally low-iodine choice. The technique is what makes this hash shine: letting the sweet potatoes and carrots sit undisturbed in the hot skillet builds that golden, slightly crispy crust before you ever stir them. The pork goes back in at the end to meld with all those caramelized edges, and a handful of fresh parsley on top brightens the whole dish. It's a complete, filling plate that doesn't feel like a compromise in the slightest.

In a large (12-inch) cast iron skillet, heat 1 tbsp of the coconut oil over medium-high heat until shimmering. Add the ground pork, sage, thyme, turmeric, ginger, and 1/2 tsp of the salt. Cook, breaking the meat into small crumbles with a wooden spoon, until the pork is cooked through with no pink remaining and the edges are lightly browned, about 6–8 minutes. Transfer the cooked pork to a plate and set aside, leaving any rendered fat in the skillet.
Add the remaining 1 tbsp coconut oil to the same skillet over medium-high heat. Add the sweet potato and carrot and spread into a single layer. Cook undisturbed for 4–5 minutes until the undersides are golden, then stir and continue cooking until the sweet potato is just tender when pierced with a fork and the edges are caramelized, about 5–6 minutes more.
