Tart rhubarb and sweet summer strawberries are a classic pairing, and freezing them into popsicle form might just be the best thing you do all season. The short ingredient list is entirely whole and recognizable — fresh fruit, honey, a little ginger, and a squeeze of lemon — which is exactly what you want when you're trying to avoid the synthetic preservatives and chemical additives that sneak into so many store-bought frozen treats. Many commercial popsicles and fruit bars contain parabens or other preservatives to extend shelf life, so making your own from scratch is one of the cleanest swaps you can make. Cooking the strawberries and rhubarb down together draws out their natural sugars and creates a deeply fruity purée that needs very little help to taste incredible. The fresh ginger adds a gentle warmth that keeps each bite interesting, while the lemon juice brightens everything up at the end. Once blended smooth and poured into molds, these freeze into vibrant, jewel-toned popsicles that look as good as they taste. They're a genuinely refreshing treat you can hand to anyone without a second thought about what's in them.

Remove the pan from the heat and stir in the lemon juice. Let the mixture cool for 10 minutes.
