Fresh strawberries muddled with lime juice, maple syrup, and a pinch of salt create a vibrant, jewel-toned base that tastes like summer in a glass. Every single ingredient here is naturally free of wheat and gluten-containing grains — no label-checking required, no swaps needed. The real magic happens when you strain out the solids and pour that deeply ruby liquid over ice, then finish it off with a slow pour of sparkling water to keep every last bubble intact. It's bright, a little tart, a little sweet, and genuinely refreshing in a way that feels far fancier than the effort involved. A lime wheel and a sprig of fresh mint on the rim take it from casual to cocktail-hour-worthy in about thirty seconds. Make it for a crowd, make it for yourself — either way, it disappears fast.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
