Fresh strawberries muddled with lime juice, maple syrup, and a pinch of salt create a vibrant, jewel-toned base that tastes like summer in a glass. Every single ingredient here is completely plant-based, so there's no need to scrutinize labels or swap anything out — it's naturally, effortlessly free of animal products from start to finish. The muddling step is where the magic happens: pressing those berries down until they're deeply red and fragrant means you're pulling out maximum flavor before a single drop of sparkling water touches the glass. Straining the mixture gives you a silky-smooth, restaurant-quality finish without any chunky bits getting in the way of that satisfying fizz. Pouring the sparkling water slowly down the side of the glass keeps every bubble intact, so the first sip is as lively as the last. A lime wheel and a sprig of fresh mint on top make it look genuinely impressive, whether you're serving it at a backyard gathering or just treating yourself on a weeknight. It's the kind of drink that makes people forget they're not missing anything at all.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
