Fresh strawberries muddled with lime juice and a touch of maple syrup create a vibrant, jewel-toned base that tastes like summer in a glass. The process is simple but satisfying — you press every last drop of flavor out of the fruit, strain it smooth, then let chilled sparkling water do the rest of the work. A pinch of fine salt might sound unexpected, but it quietly sharpens all that bright, fruity sweetness and makes the whole drink pop. Many store-bought mocktails and flavored sparkling waters sneak in spice blends or natural flavor mixes that can be hard to vet, so making this from scratch gives you total control over every ingredient. The result is a beautifully fizzy, refreshing drink that feels genuinely special without any complicated technique or equipment. Garnish with a lime wheel and a sprig of fresh mint and it looks like something you'd order at a nice restaurant — no one needs to know how easy it was.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
