Fresh strawberries muddled with lime juice and a touch of maple syrup create a vibrant, jewel-toned base that tastes like summer in a glass. The combination of bright citrus, natural fruit sweetness, and a pinch of salt hits every note — tart, sweet, and just a little complex. Straining out the solids gives you a silky, deeply colored liquid that looks stunning layered over ice before the sparkling water goes in. Every single ingredient here is naturally free of sesame, so there's no label-scanning or substitution stress involved — just clean, simple produce and pantry staples. Pouring the sparkling water slowly down the side of the glass keeps the fizz alive, so your first sip is as lively as the last. A lime wheel and a sprig of fresh mint make it feel genuinely special, whether you're serving it at a backyard gathering or just treating yourself on a Tuesday afternoon.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
