Bright, tangy, and naturally sweet, this strawberry lime mocktail is the kind of drink that makes any afternoon feel like a celebration. Fresh strawberries get muddled with lime juice, maple syrup, and a pinch of salt until they break down into a deeply ruby, intensely flavored base — no artificial syrups or mystery additives in sight. Straining the mixture through a fine-mesh sieve gives you a silky, jewel-toned liquid that looks stunning poured over ice. Topped with chilled sparkling water, it's fizzy and refreshing without any of the seed oils or emulsifiers that can sneak into store-bought flavored drinks and cocktail mixers. The whole thing comes together in just a few minutes and feels genuinely special, especially with a lime wheel and fresh mint tucked into the glass. It's proof that a gorgeous, crowd-pleasing drink doesn't need anything processed to taste incredible.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
