Fresh strawberries muddled with lime juice and maple syrup create a vibrant, jewel-toned base that tastes like summer in a glass. A pinch of fine salt might seem unexpected, but it quietly amplifies every other flavor, making the berry and citrus notes pop in the best possible way. Straining the muddled fruit gives you a silky, deeply colored liquid that looks stunning layered over ice before the sparkling water goes in. Pouring the fizz slowly down the side of the glass keeps every sip lively and effervescent rather than flat. The whole thing comes together in just a few minutes with no special equipment beyond a muddler and a fine-mesh strainer. Garnished with a lime wheel and a sprig of fresh mint, it's genuinely impressive enough to serve at a dinner party but easy enough to make on a random Tuesday afternoon.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
