Fresh strawberries muddled with lime juice and maple syrup create a vibrant, jewel-toned base that tastes like summer in a glass. The combination of bright citrus, natural fruit sweetness, and a whisper of salt makes every sip surprisingly complex for something so simple to put together. Straining the muddled mixture gives you a silky-smooth liquid that mixes beautifully with chilled sparkling water, delivering that satisfying fizz without any artificial flavors or synthetic additives — exactly what you want when you're being intentional about what goes into your body. Many store-bought mocktails and flavored sparkling drinks contain preservatives and fragrance-adjacent compounds that can be tricky to avoid, so making your own from whole ingredients puts you fully in control. A slow pour of sparkling water down the side of the glass keeps the bubbles lively, and a garnish of fresh mint and a lime wheel makes it look genuinely impressive. This is the kind of drink you can serve at a gathering and nobody will miss the alcohol — or the ingredient list anxiety.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
