Bright, tangy, and naturally sweet, this sparkling strawberry-lime drink is the kind of refreshing sip that makes any occasion feel a little more special. Fresh strawberries get muddled with lime juice, maple syrup, and a pinch of salt until they break down into a deeply ruby-colored base that's bursting with real fruit flavor. Straining out the solids gives you a silky-smooth concentrate that mixes beautifully with chilled sparkling water for a fizzy, elegant finish. The whole thing comes together in minutes with no blender, no special equipment, and absolutely nothing to worry about from a dietary standpoint — every single ingredient is clean and straightforward. Pouring the sparkling water slowly down the side of the glass is a small but satisfying trick that keeps every sip perfectly effervescent. A lime wheel and a sprig of fresh mint on top make it look like something you'd pay good money for at a cocktail bar.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
