Fresh strawberries muddled with lime juice and maple syrup create a vibrant, jewel-toned base that tastes far more sophisticated than anything you'd pour from a bottle. The fine-mesh straining step is the secret weapon here — it pulls every drop of that deeply red, intensely fruity juice away from the pulp, leaving you with a silky, restaurant-quality mocktail. A slow pour of chilled sparkling water keeps the fizz alive, so each sip has that satisfying effervescence right to the bottom of the glass. Every single ingredient in this drink is naturally free from lupin and lupin-derived additives, which can sneak into unexpected places like flavored syrups or pre-made drink mixes. Making it from scratch with whole fruit and a touch of maple syrup means you stay in complete control of what goes into your glass. Dress it up with a lime wheel and a sprig of fresh mint and it looks every bit as good as a cocktail from a proper bar.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
