Bright, tangy, and naturally sweet, this strawberry lime mocktail is the kind of drink that makes any occasion feel a little more special — no bar cart required. Fresh strawberries get muddled with lime juice, maple syrup, and a pinch of salt until they break down into a deeply ruby, intensely fruity base that tastes nothing like anything from a bottle. Straining the mixture through a fine-mesh sieve gives you a silky, jewel-toned liquid that's clean and refreshing without any pulpy texture getting in the way. Topped with chilled sparkling water and poured slowly to keep every last bubble intact, the result is fizzy, vibrant, and genuinely satisfying. The whole thing comes together in minutes and is completely plant-based, with zero seafood-derived ingredients to worry about — no hidden fish sauce, no worcestershire, just honest fruit and citrus. A lime wheel and a sprig of fresh mint make it look like something you'd pay twelve dollars for at a rooftop bar.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
