Bright, tangy, and genuinely refreshing, this strawberry lime mocktail is the kind of drink that makes you forget you're not sipping something from a fancy cocktail bar. Fresh strawberries get muddled down with lime juice and maple syrup until they release a deeply ruby, intensely fruity base that tastes like summer in a glass. Because every single ingredient here is whole and unprocessed — real fruit, fresh citrus, a touch of maple, and plain sparkling water — there's nothing hidden to worry about, no additive-laden syrups, no store-bought mixers with mystery stabilizers. Emulsifier-free drinking can actually be tricky with packaged beverages, since flavored sparkling waters and cocktail mixers often sneak in additives, but making your own base from scratch sidesteps all of that completely. Straining the muddled mixture through a fine-mesh sieve gives you a silky, jewel-toned liquid that looks stunning and feels polished without any extra effort. A slow pour of chilled sparkling water keeps the fizz alive, and a sprig of mint or a lime wheel on the rim takes it from weeknight treat to something you'd proudly serve at a dinner party.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
