Fresh strawberries muddled with lime juice and a touch of maple syrup create a vibrant, jewel-toned base that tastes like summer in a glass. The combination of bright citrus, natural fruit sweetness, and a hint of salt makes every sip surprisingly complex for something so simple to pull together. Many flavored drinks and cocktail mixers sneak in spice blends or flavoring agents that can be a real headache to vet, so making this from scratch with whole, recognizable ingredients is a genuine relief. Straining out the solids gives you a silky-smooth liquid that looks almost too pretty to drink — then you top it with chilled sparkling water for a satisfying fizz that keeps things light and refreshing. A lime wheel and a sprig of fresh mint make it feel genuinely festive, whether you're serving it at a backyard gathering or just treating yourself on a warm afternoon. It comes together in minutes and requires no special equipment beyond a muddler and a fine-mesh strainer.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
