Bright, tangy, and beautifully pink, this strawberry lime mocktail is the kind of drink that makes any occasion feel a little more special — no bar cart required. Fresh strawberries get muddled with lime juice, maple syrup, and a pinch of salt until they break down into a deeply ruby, intensely fruity base that tastes nothing like anything from a bottle. Straining the mixture through a fine-mesh sieve gives you a silky-smooth juice that's clean and vibrant, then chilled sparkling water brings the fizz and keeps it feeling light. The slow pour down the side of the glass is a small but satisfying trick that preserves every last bubble until the first sip. A lime wheel and fresh mint sprig on top make it look genuinely stunning, whether you're serving it at a summer gathering or just treating yourself on a Tuesday. Every single ingredient here is naturally free of celery and celery derivatives, so there's no label-reading stress — just gorgeous, refreshing flavor from start to finish.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
