Bright, tangy, and naturally gorgeous, this strawberry lime mocktail is the kind of drink that looks like it came from a fancy cocktail bar but comes together in minutes with nothing but real, whole ingredients. For anyone keeping a close eye on synthetic dyes, store-bought fruit drinks and mocktail mixes can be a minefield — that vivid pink color usually comes from a bottle of something artificial rather than actual fruit. Here, the stunning deep-red hue is entirely the work of fresh strawberries, muddled down and strained into a jewel-toned base that tastes as vibrant as it looks. Maple syrup adds a gentle, rounded sweetness, while fresh lime juice keeps everything bright and a little tart. The sparkling water gets poured slowly down the side of the glass to hold onto every last bubble, so the final drink is fizzy, refreshing, and genuinely satisfying. It's the perfect thing to serve at a summer gathering, a brunch table, or honestly just a Tuesday afternoon when you want something that feels a little special.

Place the strawberries, lime juice, maple syrup, and salt in the bottom of a large measuring cup or pitcher. Muddle firmly with a cocktail muddler or the handle of a wooden spoon until the strawberries are fully broken down and deeply red, about 30 seconds.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the muddled mixture through it, pressing on the solids with the back of a spoon to extract as much juice as possible. Discard the solids.
