This refreshing drink is the kind of thing you'll want to make on repeat all summer long. Fresh strawberries are crushed and strained to create a gorgeous deep-pink infusion, which gets layered with bold black tea, bright lime juice, and just enough maple syrup to round everything out. The result is fruity, tangy, and lightly sweet β way more interesting than anything you'd pour from a bottle. Since every ingredient here is completely plant-based, it fits naturally into a pescatarian lifestyle without any substitutions or workarounds needed. Chilling it down before serving makes a real difference, so the flavors meld and the ice doesn't water it down the moment it hits the glass. Dress it up with lime slices and fresh mint for a drink that looks as good as it tastes.

Bring 3 cups of water to a boil in a medium saucepan over high heat. Remove from the heat, add the tea bags, and steep for 5 minutes. Remove and discard the tea bags, then stir in the maple syrup until dissolved. Set aside to cool for 10 minutes.
While the tea cools, combine the strawberries and 1 cup cold water in the saucepan (or a separate bowl). Use a fork or the back of a spoon to crush the strawberries until they release their juice and the water turns deep pink, about 1 minute.
