Remove the steak from the refrigerator 20 minutes before cooking. Pat it dry with paper towels, rub all over with 1 tbsp olive oil, and season both sides with 3/4 tsp kosher salt and 1/2 tsp black pepper.
Heat a cast iron or heavy skillet over high heat until the surface is smoking, about 2–3 minutes. Add the steak and sear undisturbed for 3–4 minutes, until a deep brown crust forms on the underside and the steak releases easily from the pan.
