Sprouted grain bread has a depth of flavor that regular sandwich loaves just can't match — slightly nutty, hearty, and satisfying in a way that makes every slice feel intentional. The sprouted whole wheat flour is the real star here, delivering a tender crumb with more complexity than standard whole wheat, while ground flaxseed adds a subtle richness and a boost of wholesome goodness. A touch of honey keeps the loaf from tasting too austere, and olive oil gives the crumb a soft, moist texture that holds up beautifully for days. Store-bought "healthy" breads can be a minefield of shared equipment and ambiguous labeling, so baking your own means you know exactly what went into every slice. The two-rise method is straightforward and forgiving — your stand mixer does most of the heavy lifting, though hand-kneading works just as well if you prefer a more tactile experience. That optional oat topping gives the finished loaf a bakery-worthy look that makes it almost too pretty to cut into. Almost.

Combine the warm water, yeast, and honey in the bowl of a stand mixer (or a large mixing bowl). Stir briefly and let stand for 5–8 minutes, until the surface is foamy and the mixture smells yeasty.
Add the sprouted whole wheat flour, salt, olive oil, and ground flaxseed to the yeast mixture. Mix on low speed with the dough hook for 2 minutes, then increase to medium and knead for 6–8 minutes, until the dough is smooth, slightly tacky, and pulls cleanly away from the sides of the bowl. (To knead by hand: turn the dough onto a lightly floured surface and knead for 10 minutes, until smooth and elastic.)
