There is something deeply satisfying about pulling a golden, hearty loaf from the oven, and this sprouted grain bread delivers that moment in full. Sprouted whole wheat flour gives the bread a subtly nutty, earthy flavor and a denser, more wholesome crumb than you'd get from conventional white flour — it's the kind of loaf that makes you actually look forward to toast in the morning. Ground flaxseed is worked right into the dough, adding a gentle richness and a boost of texture that makes every slice feel substantial. A drizzle of olive oil keeps the crumb tender, while honey feeds the yeast and adds just a whisper of sweetness to balance the whole wheat depth. Store-bought sprouted grain breads can be a minefield of shared facilities and surprise add-ins, so baking your own means you know exactly what went into it — nothing more, nothing less. The two-rise process is straightforward and forgiving, and the optional oat topping gives the finished loaf that rustic, bakery-style look with almost zero extra effort. Let it cool before you slice it (we know, it's hard) and you'll be rewarded with clean cuts and a texture that holds up beautifully for sandwiches or simply slathered with butter.

Combine the warm water, yeast, and honey in the bowl of a stand mixer (or a large mixing bowl). Stir briefly and let stand for 5–8 minutes, until the surface is foamy and the mixture smells yeasty.
Add the sprouted whole wheat flour, salt, olive oil, and ground flaxseed to the yeast mixture. Mix on low speed with the dough hook for 2 minutes, then increase to medium and knead for 6–8 minutes, until the dough is smooth, slightly tacky, and pulls cleanly away from the sides of the bowl. (To knead by hand: turn the dough onto a lightly floured surface and knead for 10 minutes, until smooth and elastic.)
