Homemade bread doesn't get much more wholesome than this — a hearty, golden loaf built on sprouted whole wheat flour, ground flaxseed, and a touch of honey for just a hint of natural sweetness. For anyone navigating alpha-gal syndrome, store-bought breads can be a minefield of hidden animal-derived additives, from lard to dairy-based dough conditioners, so baking your own is genuinely one of the smartest moves you can make. Every ingredient here is plant-based and straightforward, with olive oil standing in beautifully wherever animal fats might otherwise sneak in. The sprouted flour gives the crumb a slightly nutty, complex flavor that makes this loaf taste far more interesting than your average sandwich bread. Two rises develop real structure and chew, and that optional oat topping adds a rustic, bakery-worthy finish. Once it comes out of the oven smelling like toasted grain and honey, the hardest part is waiting the full thirty minutes before you slice in.

Combine the warm water, yeast, and honey in the bowl of a stand mixer (or a large mixing bowl). Stir briefly and let stand for 5–8 minutes, until the surface is foamy and the mixture smells yeasty.
Add the sprouted whole wheat flour, salt, olive oil, and ground flaxseed to the yeast mixture. Mix on low speed with the dough hook for 2 minutes, then increase to medium and knead for 6–8 minutes, until the dough is smooth, slightly tacky, and pulls cleanly away from the sides of the bowl. (To knead by hand: turn the dough onto a lightly floured surface and knead for 10 minutes, until smooth and elastic.)
