Heat the olive oil in a 12-inch skillet over medium-high heat until shimmering. Add the ground turkey and cook, breaking it up with a wooden spoon, until no pink remains and the meat is lightly browned in spots, about 6–8 minutes, reaching an internal temperature of 165°F (74°C). Transfer the turkey to a plate and set aside.
Reduce the heat to medium. Add the onion and carrot to the same skillet and cook, stirring occasionally, until the onion is softened and translucent and the carrot has begun to soften, about 5–6 minutes.
