Chef's tip
Use plain, unsweetened soy milk, measured 1:1. It's one of the most reliable milk swaps and works in sauces, custards, and baked goods. For hot or acidic drinks, a barista-style soy milk resists curdling.
2 tbsp pure maple syrup
½ tsp ground ceylon cinnamon
¼ tsp ground cardamom
¼ tsp ground ginger
¼ tsp pure vanilla powder (optional)
1 pinch fine sea salt

Instructions

1
Combine the milk, maple syrup, Ceylon cinnamon, cardamom, ginger, vanilla powder (if using), and salt in a small saucepan. Whisk briefly to distribute the spices.
2
Warm the mixture over medium-low heat, whisking occasionally, until steaming and small bubbles form around the edges — about 5 to 7 minutes. Do not let it boil.
