Fresh raspberries simmered down with maple syrup and water create a jewel-toned syrup that forms the heart of this gorgeous, refreshing drink. Bright lemon juice cuts through the sweetness, and chilled sparkling water brings the whole thing to life with a satisfying fizz. The result is a vibrant, rosy spritzer that looks like something you'd order at a fancy brunch — but comes together in your own kitchen with almost no effort. Grain-based ingredients are simply not part of this picture; every component here is naturally free of rye and any related concerns, so you can sip without a second thought. A garnish of fresh mint and a lemon wheel makes it feel genuinely special, whether you're serving a crowd or just treating yourself on a warm afternoon. It's the kind of drink that disappears fast, so you may want to double the syrup batch right from the start.

Combine the maple syrup and water in a small saucepan over medium heat, stirring until the maple syrup dissolves, about 1 minute. Add the raspberries and cook, pressing them gently with the back of a spoon, until the berries have broken down and the syrup is deep red, about 3–4 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly with a spoon to extract as much liquid as possible. Discard the solids. Let the raspberry syrup cool to room temperature, about 10 minutes.
