Combine the maple syrup and water in a small saucepan over medium heat, stirring until the maple syrup fully dissolves, about 2 minutes. Bring to a gentle simmer, then reduce the heat to low and cook for 3 minutes, until the syrup is slightly thickened and coats the back of a spoon.
Remove the saucepan from the heat and stir in the vanilla extract. Let the syrup cool to room temperature, about 15 minutes.
