This drink is the kind of unexpected combination that sounds a little wild until you actually try it — and then you wonder why you haven't been making it all summer. Strong brewed coffee meets bright, zippy lemon juice and a homemade maple simple syrup that comes together in just a couple of minutes on the stovetop. The sparkling water gets poured slowly down the side of the glass to keep every sip effervescent and lively, which makes the whole thing feel genuinely special. Many coffee drinks and flavored lemonades sneak in ginger as a "warming" element, but this recipe skips it entirely without sacrificing any complexity or depth. The maple syrup brings a rich, caramel-like sweetness that plays beautifully against the tartness of fresh lemon juice, and the coffee adds a bold backbone that ties it all together. Serve it over a tall glass of ice with a lemon slice on the rim and it looks as impressive as anything you'd order at a café.

Combine the maple syrup and water in a small saucepan over medium heat, stirring until the syrup is fully dissolved and the mixture just comes to a simmer, about 2 minutes. Remove from heat and let cool to room temperature, about 20–30 minutes.
Divide the ice evenly between two tall glasses. Pour 1/2 cup of the cooled coffee over the ice in each glass.
