Cold brew meets citrus meets maple in one of the most unexpectedly refreshing drinks you'll make all summer. Strong brewed coffee brings a deep, roasted backbone, while fresh lemon juice cuts right through it with bright acidity โ and a homemade maple simple syrup ties everything together with a warm, earthy sweetness that plain sugar just can't replicate. The whole thing gets topped with chilled sparkling water for a fizzy lift that makes it feel genuinely special. Since this drink is built entirely from coffee, citrus, maple syrup, and sparkling water, it's naturally free of eggs and any of the hidden binders or emulsifiers that can sneak into store-bought flavored beverages. Making the maple syrup from scratch takes only a couple of minutes on the stovetop, and once everything is cooled and poured over ice, assembly is effortless. Pour slowly when you add the sparkling water to keep that satisfying fizz intact all the way to the first sip.

Combine the maple syrup and water in a small saucepan over medium heat, stirring until the syrup is fully dissolved and the mixture just comes to a simmer, about 2 minutes. Remove from heat and let cool to room temperature, about 20โ30 minutes.
Divide the ice evenly between two tall glasses. Pour 1/2 cup of the cooled coffee over the ice in each glass.
