Cold coffee drinks can feel like a minefield when you're scanning labels for hidden spice blends or pre-made syrups loaded with unexpected seasonings. This one sidesteps all of that with a completely from-scratch approach โ just strong brewed coffee, fresh lemon juice, a quick homemade maple syrup, and sparkling water. The maple simple syrup takes only a couple of minutes on the stove, and because you make it yourself, you know exactly what's in it. What you get is a drink that's bright and citrusy up front, with a deep, earthy sweetness from the maple and a satisfying fizz that makes it feel genuinely special. The contrast between the bold coffee and the tart lemon is surprisingly balanced โ not too sweet, not too sharp. It's the kind of refreshing glass you'd happily pay too much for at a cafรฉ, but it comes together at home with almost no effort.

Combine the maple syrup and water in a small saucepan over medium heat, stirring until the syrup is fully dissolved and the mixture just comes to a simmer, about 2 minutes. Remove from heat and let cool to room temperature, about 20โ30 minutes.
Divide the ice evenly between two tall glasses. Pour 1/2 cup of the cooled coffee over the ice in each glass.
