Cold brew meets citrus meets maple in one of the most unexpectedly refreshing drinks you'll make all summer. The combination of strong coffee, bright fresh lemon juice, and a homemade maple simple syrup sounds bold, but it comes together in a way that's balanced, lightly sweet, and genuinely craveable. Because you're making the syrup yourself from just maple syrup and water, you know exactly what's going into your glass — no preservatives, no artificial additives, nothing you can't pronounce. Many store-bought flavored syrups and bottled coffee drinks rely on BHA or BHT to extend shelf life, so mixing your own from scratch is the cleanest route to a drink like this. Pouring the sparkling water slowly down the side of the glass keeps every sip fizzy and bright, so don't skip that step. A couple of lemon slices on the rim make it feel like something you'd pay too much for at a café, but this version is entirely yours.

Combine the maple syrup and water in a small saucepan over medium heat, stirring until the syrup is fully dissolved and the mixture just comes to a simmer, about 2 minutes. Remove from heat and let cool to room temperature, about 20–30 minutes.
Divide the ice evenly between two tall glasses. Pour 1/2 cup of the cooled coffee over the ice in each glass.
