Cold brew coffee meets the bright, citrusy world of agua fresca in this refreshing drink that feels like a genuine upgrade to your usual iced coffee routine. The overnight steep pulls a smooth, mellow concentrate from coarsely ground coffee, and when it meets maple syrup and fresh lime juice, the result is something genuinely special โ earthy, sweet, and a little tart all at once. A pinch of salt ties everything together and makes the flavors pop in a way that's hard to put your finger on but impossible to ignore. The whole thing gets topped with chilled sparkling water right before serving, so every sip has that satisfying fizz. Because the recipe is built entirely from whole, simple ingredients โ coffee, maple syrup, limes, salt, and water โ there's no label-reading required and no concern about hidden additives sneaking in. It's an impressive drink to set out for guests or to keep in the fridge as a personal afternoon treat, and the make-ahead cold brew base means most of the work happens while you sleep.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
