Cold brew concentrate, maple syrup, and fresh lime juice come together in a drink that feels genuinely refreshing and a little unexpected — earthy, bright, and lightly sweet all at once. The overnight steep does the heavy lifting, pulling a smooth, low-bitterness concentrate from coarsely ground coffee without any heat involved. A pinch of salt rounds out the flavors in a way that's subtle but makes a real difference, so don't skip it. When you top the coffee-maple base with chilled sparkling water, the whole thing lifts and fizzes into something that feels far more special than the effort required. It's the kind of drink you'd happily serve at brunch or sip solo on a warm afternoon, and it comes together with nothing more than a pitcher, a strainer, and a little patience. The maple syrup keeps things naturally sweetened, and every ingredient here is straightforwardly plant-based, so it works for anyone at the table without any substitutions needed.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
