Cold brew coffee meets the bright, citrusy world of agua fresca in this refreshing drink that feels like a genuine upgrade to your usual iced coffee routine. The overnight steep pulls a smooth, low-acid concentrate from coarsely ground coffee, and maple syrup brings a rounded, caramel-like sweetness that plays beautifully against fresh lime juice. A pinch of salt ties everything together in a way that makes each sip taste more complex than the short ingredient list suggests. When you top the coffee-maple base with chilled sparkling water, you get this gorgeous effervescence that makes it feel almost cocktail-worthy — without a drop of alcohol. It's naturally free from any animal proteins, so there's zero need to scrutinize labels or worry about hidden ingredients sneaking in. Make the cold brew the night before and the rest comes together in minutes, making it an easy crowd-pleaser for brunch, a backyard gathering, or just a slow weekend morning when you want something a little special.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
