Cold brew, maple syrup, and fresh lime juice walk into a pitcher — and the result is one of the most refreshing drinks you'll make all summer. The overnight steep pulls a smooth, mellow concentrate from coarsely ground coffee, which then gets brightened with citrus and rounded out by the warm sweetness of maple syrup. A pinch of salt ties everything together in a way that sounds subtle but makes a real difference in the final glass. When you're ready to serve, sparkling water gives the whole thing a lively, effervescent lift that makes it feel genuinely special. Every single ingredient here is naturally free of tree nuts, so there's no label-scanning or substitution gymnastics required — just straightforward, delicious prep. It works beautifully as a brunch drink, an afternoon pick-me-up, or anything in between, and the base can be made ahead and kept cold until guests arrive. Squeeze a lime wedge over the top right before drinking and you'll wonder why you ever settled for plain iced coffee.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
