Cold brew coffee meets the bright, citrusy world of agua fresca in this refreshing drink, and the result is genuinely hard to put down. The base comes together with an overnight steep — no special equipment needed beyond a pitcher and a strainer — so most of the work happens while you sleep. Maple syrup brings a rounded, caramel-like sweetness that plays beautifully against the tartness of fresh lime juice, while a pinch of salt ties everything together and makes the flavors pop. When you're ready to serve, a splash of chilled sparkling water adds a lively fizz that makes this feel like something you'd order at a trendy café. Every single ingredient here is straightforward and naturally free from tree nut concerns, so there's no label-scanning or substitution stress involved. It's equally at home at a weekend brunch, a backyard gathering, or just a slow afternoon when you want something more interesting than iced coffee.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
