Cold brew coffee meets the bright, citrusy world of agua fresca in this refreshing drink, and the result is genuinely hard to put down. Maple syrup brings a rounded, caramel-like sweetness that plays beautifully against the bold coffee concentrate and the sharp pop of fresh lime juice. A pinch of salt ties everything together in that subtle way that makes you wonder why every drink doesn't include it. The whole thing gets topped with sparkling water right before serving, so every glass has that satisfying fizz without going flat on you. Because the base is built entirely from scratch — cold brew you steep overnight, real maple syrup, fresh-squeezed lime — there's no need to scan labels or second-guess what's hiding in a store-bought mix. It's a genuinely crowd-pleasing drink that works just as well at a weekend brunch as it does on a hot afternoon when you need something a little more interesting than iced coffee.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
