Cold brew coffee meets the bright, citrusy world of agua fresca in this refreshing drink, and the result is genuinely hard to put down. A slow overnight steep pulls a smooth, mellow concentrate from coarsely ground coffee, so there's none of the bitterness you'd get from hot brewing. Maple syrup brings a rounded, caramel-like sweetness that pairs beautifully with fresh lime juice, while a pinch of salt ties everything together and makes the flavors pop. When you top the coffee-maple base with chilled sparkling water, the whole thing becomes effervescent and lively β perfect for a warm afternoon or a brunch spread that needs something a little unexpected. The ingredient list is refreshingly short and completely straightforward, with no specialty items or store-bought syrups to track down. It's the kind of drink that looks impressive in a glass but comes together with almost no effort once your cold brew has done its thing overnight.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
