Cold brew, maple syrup, fresh lime juice, and a hit of sparkling water come together in a drink that feels equal parts refreshing and indulgent. The base is built overnight in the fridge, so the coffee steeps low and slow into a smooth, mellow concentrate without any bitterness. Maple syrup brings a warm, caramel-like sweetness that plays beautifully against the bright citrus, and a pinch of salt ties everything together in a way that makes each sip surprisingly complex. When you top the glasses with chilled sparkling water, the whole thing lifts into something effervescent and celebratory — perfect for a slow weekend morning or a warm afternoon. Every single ingredient here is naturally free of dairy, so there's no swapping, substituting, or label-checking required. It's the kind of drink that looks impressive on a table but comes together with almost no effort once your cold brew is ready.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
