Cold brew coffee meets bright citrus and earthy maple syrup in this refreshing agua fresca that feels like a café-quality drink you made entirely at home. The overnight steep pulls a smooth, low-bitterness concentrate from coarsely ground coffee, which then gets balanced by fresh lime juice and a touch of salt that makes every flavor pop. Maple syrup does double duty here — it sweetens naturally while adding a subtle warmth that plays beautifully against the citrus. When you top the whole thing with chilled sparkling water, you get this gorgeous, lightly fizzy drink that's equal parts energizing and cooling. It's the kind of thing you'll want to batch ahead for a weekend brunch or a hot afternoon when you need something more interesting than plain iced coffee. The ingredient list is completely straightforward — no syrups from a bottle, no mystery additives — just pantry staples and fresh limes coming together in a pitcher.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
