Cold brew, maple syrup, fresh lime juice, and a hit of sparkling water come together in a drink that feels like a coffee shop invention you stumbled onto by accident. The deep, slightly bitter notes of the overnight concentrate play beautifully against the earthy sweetness of maple and the bright pop of citrus — it's refreshing in a way that plain iced coffee just isn't. A pinch of salt ties everything together and makes the flavors taste more like themselves, which is a small trick that makes a big difference. Many flavored coffee drinks and agua fresca mixes on store shelves sneak in coconut water or coconut-derived sweeteners, so making this from scratch means you know exactly what's in your glass. The process is mostly hands-off — the cold brew does its thing overnight in the fridge, and the rest comes together in minutes. Finish each glass with a splash of chilled sparkling water right before serving so you get that satisfying fizz in every sip.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
