Cold brew coffee meets the bright, earthy sweetness of maple syrup in this refreshing agua fresca that feels like a specialty café drink you can make entirely at home. The base comes together with an overnight steep — just coffee and cold water — so there's no heat involved and the flavor stays smooth and mellow rather than bitter. Fresh lime juice brings the citrusy lift you'd expect from a classic agua fresca, and because it comes straight from the fruit rather than any processed additive, it keeps the whole drink clean and free from manufactured citric acid that sneaks into so many bottled beverages and flavor mixes. A pinch of salt rounds everything out and makes the maple and coffee notes pop in a way that's genuinely surprising. When you're ready to serve, a splash of chilled sparkling water turns the whole thing effervescent and lively over ice. It's the kind of drink that works equally well as a morning pick-me-up or an afternoon treat, and it scales easily if you're making it for a crowd.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
