Cold brew coffee meets the bright, citrusy world of agua fresca in this refreshing drink, and the result is genuinely hard to put down. Maple syrup brings a warm, rounded sweetness that plays beautifully against the tang of fresh lime juice, while a pinch of salt ties everything together in a way that makes each sip taste more complex than the short ingredient list suggests. The cold brew base is made simply by steeping coarse grounds overnight in cold water — no heat, no fuss, and no additives hiding in a store-bought concentrate. Because every ingredient here is whole and straightforward, you can feel confident there are no synthetic preservatives like BHA or BHT anywhere in the glass. A final splash of sparkling water gives it that effervescent lift that makes it feel like a real occasion drink, even on a Tuesday afternoon. It's equally at home at a weekend brunch or as an afternoon pick-me-up when you want something more interesting than plain iced coffee.

Combine the coarsely ground coffee and 2 cups cold water in a large pitcher. Stir briefly to saturate all the grounds, then cover and refrigerate for at least 8 hours or overnight.
Set a fine-mesh strainer over a bowl or large measuring cup and pour the cold brew through it, discarding the spent grounds. You should have about 1 1/2 cups of concentrate.
