Fresh blueberries, bright lime juice, and a handful of mint come together in a drink that looks like something from a fancy cocktail bar but comes together in minutes at home. Muddling the fruit and herbs releases their natural oils and juices, creating a deeply flavored base that gets strained smooth before the sparkling water ever touches it. Maple syrup steps in as the sweetener here, keeping everything clean and naturally derived without any of the flavor-masking additives you'd find in commercial syrups or pre-made drink mixes. Every single ingredient in this spritzer is whole and unprocessed, so you can sip without a second thought about hidden additives sneaking into your glass. The slow pour of chilled sparkling water down the side of the glass keeps those bubbles lively all the way to the last sip. It's gorgeous enough to serve at a summer gathering but easy enough to throw together on a random Tuesday afternoon when you just want something refreshing and a little special.

Combine the blueberries, mint leaves, maple syrup, lime juice, and cold water in a pitcher. Muddle firmly with a muddler or the back of a wooden spoon until the blueberries are fully crushed and the mint is bruised and fragrant, about 30 seconds.
Set a fine-mesh strainer over a large measuring cup or bowl and pour the muddled mixture through it, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids.
