This vibrant, jewel-toned drink is the kind of thing that makes a regular afternoon feel like a celebration. Fresh or frozen blueberries are simmered down with maple syrup and lemon zest into a gorgeous deep-purple syrup, then brightened with fresh lemon juice and topped off with chilled sparkling water. The result is tart, lightly sweet, and beautifully effervescent — everything you want in a refreshing homemade spritz. Because the sweetness comes entirely from maple syrup rather than refined sugar, it feels a little more wholesome without sacrificing any of the flavor. Every ingredient here is naturally plant-based, so there's no need to scrutinize labels or swap anything out — it just works. A lemon slice and a sprig of fresh mint on the rim make it look like something you'd order at a fancy brunch spot, but it comes together in your own kitchen with minimal effort. Make a big batch of the syrup ahead of time and keep it in the fridge so you can pour these on demand all week long.

Combine the blueberries, water, maple syrup, and lemon zest in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries burst and the liquid turns deep purple, about 6–8 minutes.
Remove the pan from the heat and press the mixture through a fine-mesh strainer into a pitcher or large measuring cup, pressing the solids firmly with the back of a spoon to extract as much syrup as possible. Discard the solids.
