Few dishes are as quietly satisfying as a thick, golden Spanish tortilla — a simple combination of olive oil-softened potatoes, sweet onion, and eggs that comes together into something far greater than the sum of its parts. The Yukon Golds are cooked low and slow in olive oil until completely tender, giving the finished tortilla that signature creamy, almost custardy interior that sets it apart from any ordinary egg dish. The flip is the dramatic moment every cook secretly loves, and once you nail it, you'll feel like you've unlocked a genuine kitchen skill. Everything here is naturally free of any meat, so there's no substitution needed and nothing to second-guess — just honest, pantry-friendly ingredients doing exactly what they're supposed to do. Serve it warm straight from the pan or let it cool to room temperature, where the flavors actually deepen and meld beautifully. A scatter of fresh parsley adds a bright, herby finish that makes it feel just a little more special. This is the kind of recipe that earns a permanent spot in your weeknight rotation.

Heat the olive oil in a 10-inch nonstick skillet over medium-low heat until it shimmers. Add the potato slices and onion, season with ½ tsp of the salt, and stir gently to coat. Cook, turning the potatoes occasionally with a slotted spoon, until the potatoes are completely tender and yield easily when pressed with the back of a spoon, about 20–25 minutes. They should be soft but not browned.
Use a slotted spoon to transfer the potatoes and onion to a large mixing bowl, leaving as much oil behind in the skillet as possible. Reserve 2 tbsp of the cooking oil in the skillet and discard the rest (or save for another use).
